love the ladies!

Here are some recent pictures of my Tennis Team. We had a wonderful day, playing in GORGEOUS weather, and hitting the ball well makes it even sweeter.

Monica, Debbie, Cindy

Reach for the sky! :)

Jen & I...we love being partners. Today we played really well together, even though we lost in the third set. Some days, your game is so on, but you still take a loss. I'd rather lose when I'm playing at my best any day!

Lois & Carroll played even better!

Last week, Cindy and Sherry pulled off a win in the third set...pheow!

Looking pretty!

Cindy has a killer forehand groundie...the girl can rip it!

Jen can smash her backhand groundies. I'm glad I play with her and not against her!

Shauna used to play at BYU-HI, and she took state back in the day. The girl has form unlike anyone I've ever played with!

Thanks to a fun day and a wonderful season...tennis is my sanity!

straight

Hair, that is. I made the mistake of using my chi flat iron on her last week, and now that's the only way she wants it...good one, Stacy! Bryanna has a stubborn side (just like her mamma), so of course you can imagine what its like, me, doing her hair, and her...knowing exactly how she wants it. I can usually con her into doing it my way, but some days I'm just not willing to battle it out with her. So, looks like we may be having some straight days ahead of us!

And what would I do with out Maddox and his sweet little personality? He is the funniest little boy, who is constantly repeating Bryanna. He's turning into quite the quick study!

cookie decorating

Our Relief Society does a Dessert of the Month, and there is such a wonderful, talented woman in our ward who decorates better than Martha Stewart! She hosted at her home last night and we had a fabulous time as she demonstrated, and then getting to try our own hand at it!!
Here is my finished product, for a rookie!

I made a special one for each kid!

I made one with an M on it, but Maddox preferred the tennis ball...with the way he loves tennis, he just might make a living out of it!

My absolute favorite tasting cookie was the Gingerbread. She had a variety of Chocolate Cut-Out cookies and Sugar cookies...those were delicious as well.

Gingerbread Recipe (Kaye Wallace)

Makes about 3 dozen, depending on size

Preheat oven to 350 degrees F

  • 5 cups all purpose flour, plus more for work surface
  • 1 1/2 Tbsp. ginger
  • 2 tsp cinnamon
  • 1 tsp salt
  • 1 1/2 cup shortening (unsalted butter can be substituted)
  • 2 cups sugar
  • 2 eggs, slightly beaten
  • 1/2 cup dark, unsulfered molasses

In a large bowl, sift flower, ginger, cinnamon, and salt. Set aside.

Cream shortening and sugar until light and fluffy. Beat in eggs and molasses. Add flour mixture, and beat on low until combined. Divide dough in half; wrap in plastic and flatten into disks. Chill 1 hour.

On lightly floured work space, roll out dough to 1/3 inch thick and cut into desired shapes. Transfer to parchment lined baking sheets. Bake until cookies are lightly browned, about 10-12 minutes. Rotate baking sheets in oven half way through baking time. Let cool completely on sheets, then transfer to wire cooling racks, before decorating.

Royal Icing (Martha Stewart)

Makes about 2 1/2 cups

  • 1 lb. confectioners' sugar
  • 5 Tbsp. meringue powder
  • Scant 1/2 cup warm water
  • Gel-paste, liquid, or powdered food coloring

In the bowl of an electric mixer fitted with the paddle attachment combine all the ingredients, except food coloring, on low speed. Mix until fluffy yet dense, 7-8 minutes. Use icing immediately, or transfer to air-tight container (royal icing hardens quickly when exposed to air). Beat well with a spatula before using.

To thin royal icing for flooding (filling areas with a thin layer of icing), stir in additional water 1 teaspoon at a time. Test consistency by lifting spoon and letting icing drip back into bowl; a ribbon of icing on the surface should remain for 5 to 7 seconds before settling back.

To color icing, dip the tip of a toothpick into the food coloring and then into the icing. Mix with a rubber spatula, adding more color on a new toothpick until desired shade is reached.

Icing tips

  • Royal icing can be made with egg whites instead of meringue powder. Use the freshest eggs possible! Care should be given if serving egg whites to children, pregnant women and older adults.
  • If you add too much water when thinning your icing, just put more powdered sugar in to achieve the correct consistency.
  • When using the "flooding" technique, make an outline around the border of the cookie then flood the inside of the outline with the background color first. Next, drop the other colors and designs on top of that. If you try to put the design down first, it will get lost in the "flood".
  • If your cookie design is very intricate, use a stiff icing to outline each color, then fill in with the "flooding" technique.

dinner

Last night, Mark surprised me with eating out at Oosaka, a Japanese resturant. That's huge in showing how much he loves me, especially since he doesn't prefer (at all) japanese food. I, on the other hand, love sashimi, sushi and most of all, vegitable and shrimp Tempura!! I usually eat it with my sister, Jen, for lunch, because she loves it just as much (or more) than me! So thanks honey, I had such a good time. And not to leave out dessert at Neilson's frozen custard...Needless to say, I will be not eating today!!

Happy 5th Anniversary, Honey!!

Mark, you are my hero! I love you so much. It has been the best 5 years of my life, married to my best friend! I can count on you for anything, and I know we can make it through anything! To another 5 amazing years!! Thanks for sharing your life with me.

Love you,

Stacy

party central

Birthday Girl...ready to party!

pressing out the pizza dough!

Saucing the pizza!

While the pizzas were baking, the girls got to frost their very own cake!

And tasting it too!!

They all loved the frosting, and not just spreading it around the cake...eating it too! By the time the pizzas came out, no one was hungry!

Pinata Time!
The girls in their matching aprons!

I asked Bryanna what her favorite part of the day was, and she said, "Blowing out the candles!" So, here's for you Bryanna!

Present time! One of the best parts of a little girl's party! Thanks for all those cute presents! Bryanna loves them. I have been opening toys the entire afternoon!

I think it turned out well, for all the work it was! It really was a special day and all the girls had a blast!!

HAPPY BIRTHDAY BRYANNA!

Mermaid Cake

The Mermaid Cake. At first, Bryanna really wanted a Dolphin cake. (I mean every time I asked her what kind of cake she wanted, that was it!) I had a hard time trying to get myself geared up to create such a cake. I'm not much of an artist (at all), so that was going to be on a level I shouldn't even touch. Thank goodness for Barbies and Mermaids. I can decorate, and so can Bryanna. She had a total BLAST helping me put on some of the candy designs!! (with only one blunder!)

This girl LOVES her cake. And I'm a happy mom, getting out of making the Dolphin cake just about made my day!!

(Yes, below is my NEW Cuisinart mixer. I love it. It is better than anything I've looked at by far. It has 1000 watts (not one hundred, but one thousand!!) 12 speeds, and a timer!!! All the attachments, bells and whistles!! Its what makes this Birthday party possible!!

I also baked ten 9" cakes for all the party girls to frost and decorate!! I think they will have the time of their lives!

My mom gave her a Glam make-up set...she is already putting it to good use! (and yes, she picked out her own outfit. And yes, that's a christmas tree on her shirt)

A little over board if you ask me. But if you ask her, she's just getting started!

Happy almost Birthday my beautiful Bryanna!

Birthday Aprons

The last two days, my mom and I have been working like busy bees making the most adorable aprons ever!! Thanks Lindsay for helping, we couldn't have done it without looking at your mom's creation first...thanks!!

My mom is leaving for Chicago today, so we had to get it done last night. Tuesday we traced out a pattern and cut all the fabric. Yesterday, we worked passed midnight, (and I'm dragging today). But I'm so glad it is all finished. What mothers do for their children...let me tell ya, its a fierce love! Thanks mom, you are the best!

My hard working, creative, smart, wonderful mother, sewing like a china factory!

This is the Birthday Girl's Apron. I added mini pom-poms to it, just giving it an extra special touch, for an extra special girl!
Bryanna's party is on Saturday. She's having 9 little girls over and they need aprons for a baking party! They get to make their own pizza for lunch and then they will decorate their very own cake!

One of ten Aprons we put together!!

If you can believe it, I snatched this fabric up at Walmart, of all places!! I used EVERYstitch of fabric, binding and rick rack. Talk about cutting the pattern wisely!

I'm so excited for her party! The girls will all look so adorable in them!

Wishy Watchy

My friend has started the CUTEST watch company ever! It's on Etsy, and you'll have to check it out at: www.wishywatchy.etsy.com.

They are VERY reasonable, and totally hip!!! She has a huge collection, more so than shows, with children sizes too!!!
